Cherr-ific Salad

25 cups (3 lbs 12 oz)  Spinach, partly trimmed fresh
25 cups (5 lbs)   Romaine Lettuce, untrimmed
3 ⅛ cups (1 lb 1 oz)   Cherries, dried

Cherr-ific Salad Directions

  1. Chop lettuce and spinach.
  2. Toss lettuce, spinach, and dried cherries together.
    CCP: Hold for cold service at 41°F or lower.
