1 broccoli bite provides:

  • ⅜ cup dark green vegetable, .25 oz eq meat/meat alternate, and .75 oz eq grains.

Broccoli Bites

3 gal 2 qt 2 cups (9 lb 8 oz)  Frozen broccoli, chopped
1 qt 2 cups (1 lb 8 oz)  Low-fat cheddar cheese, shredded
1 qt 3 cups (3 lb 8 oz)  Frozen egg whites, thawed
1 qt 3½ cups (1 lb 14 oz)  Bread crumbs

Broccoli Bites Directions

  1. Turn broiler on high heat.
  2. Wash vegetables and cut into bite sized pieces.
  3. In a large pot, heat 15c water.
  4. Combine broccoli, cheese, egg whites, and bread crumbs in a large bowl. Stir well.
  5. Using a No. 6 scoop, portion ⅔ cup (about 4 oz) broccoli mixture onto a sheet pan (18" x 26" x 1") lined with parchment paper and lightly coated with pan-release spray.  For 50 servings, use 2 pans.
  6. Bake: Conventional oven: 375 °F for 25 minutes. Convection oven: 350 °F for 15 minutes.
  7. Critical Control Point: Heat to 165 °F or higher for at least 15 seconds.
  8. Critical Control Point: Hold for hot service at 140 °F or higher.
  9. Serve 1 broccoli bite.
