  • .25 oz meat/meat alternate ¼ cup dark green vegetable ½ cup starchy vegetable, and ¼ cup other vegetable.

Covered with Cheese

4 lbs  Broccoli, fresh, trimmed
4 lbs  Cauliflower, fresh, whole, trimmed
12 lbs  Russet Potatoes, fresh
1 lb 2 oz  Swiss Cheese, low-fat
3 Tbsp  Black Ground Pepper
4 ½ tsp  Salt

Covered with Cheese Directions

  1. Turn broiler on high heat.
  2. Wash vegetables and cut into bite sized pieces.
  3. In a large pot, heat 15c water.
  4. Add the potatoes, salt, and pepper to the water just before it boils.
  5. Cover pot but allow steam to vent and cook for 5 minutes while stirring occasionally.
  6. Add broccoli and cauliflower to potatoes and cook until about tender. Drain.
  7. Spray the sides and bottom of a full sheet pan and add vegetables.
  8. Broil vegetables until slightly browned.
  9. Top with cheese and broil until cheese is melted and starting to brown.
  10. Let stand on top of stove for five minutes before serving.
    CCP: Heat to internal temp of 135º F. Hold for hot service at 135º F or higher.
